Weekly Food Prep

I hope you all had a great weekend! I posted this picture of my food prep last night on Instagram and a few people wanted more details on what I do so here it is. I really think the best way to eat clean is to have only clean options around. I'm usually too busy during the week to cook for my meal the next day, so I've started to make food on Sunday nights. If I don't prep in advance, I'll probably eat out and it won't be as healthy. I usually make a main source of protein like chicken and pair it with oven baked veggies. I make enough to take to work for lunch during the week and sometimes I'll have extras for dinner if I want to. 
Last night I made ground chicken meatballs and roasted veggies.

The veggies I used were sweet potatoes, broccoli, cauliflower, carrots, celery and brussels sprouts. I coat the veggies in about 1 tablespoon of olive oil and season with any type of seasoning I'm in the mood for. Last night I used garlic powder, seasoned salt, sumac, pepper and a little tandoor spice.

For the meatballs I combined the ground chicken with chopped onions, feta cheese, wheat bread crumbs, pepper, garlic powder, seasoned salt and sumac. 

I baked both in the oven at 425 degrees. The meatballs take about 15-20 minutes to bake, flipping in between and the veggies take a bit longer between 30-45 minutes. I bake the veggies till I get the soft consistency that I like. 

For lunch I'll take about 3oz of the protein I make to work which is about the size of your palm- for me it was 3 meatballs and a little more than a cup of veggies for the side.

  1. YUMM! This looks great. Sometimes I meal prep like this, but by Wednesday I get sick of eating the same meal every day. Do you cook again mid-week?

    1. Sorry for such a late reply! My mistake! I don't cook again mid week unless I really want something else. I'm pretty plain jane when it comes to my food haha. But sometimes I run out and I will just make something simple like oatmeal or a fresh salad!
